An easy meal for kids to make while you drink wine, plus win the ultimate picnic kit.

By the time dinner time rolls around most of us have already used up our second wind and we are about to hit the wall. Whilst some days cooking can be a great way to unwind, other days it is nothing but a grinding chore.

Sometimes we all need a little helping hand at the end of the day, and although often this reference would be about Valium, today it is not.

Today it is about chicken and children.

The chicken is ready oven roasted chicken from the new Steggles Just Eat It range available from your supermarket, and the children are the little terrors that trash your house, pee on your lawn and eat like locusts.

If you combine these two elements, my friend, you could be kicking back and watching this easy meal for kids to make come together with a chilled glass of vino in your hand.

Here’s the low down on the recipe.

Yield : 6 tacos

What you will need :

  • 2x 150g packets of Just Eat It Oven Roasted Chicken
  • 3 limes
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 mango, diced
  • 1 lebanese cucumber, diced
  • 1 small spanish onion, diced
  • 1 cup chopped coriander
  • 2 cups shredded purple cabbage
  • 1 avocado
  • 6 multigrain tortillas, or tortillas of your choice
  • chilli sauce to serve

What you will need to do :

Place your Just Eat It chicken into a bowl. In a small bowl combine juice of one lime and your spices and stir. Mix through your chicken and leave to sit while you put the rest together.

Into a large bowl place your cucumber, mango, onion and coriander and squeeze the two remaining limes over the top. Mix well to combine, and season to taste.

Pop your tortillas in the microwave for 30 or heat in the oven following the instructions on the packet.

Put a small amount of cabbage on the middle of your tortillas, top with salsa, add some chicken and sliced avocado. Slather your chilli now if you’re game and wrap the whole thing up. You may want to consider wrapping them in plastic wrap or baking paper to prevent salsa accidents with small children.

Repeat until you’ve made as many as you want, and enjoy with gusto.

NOTE : Even if your kids aren’t handy enough with a knife to do all of the chopping themselves, I often find allowing them to help in the creation process will entice them to eat what they’ve helped to make.

    You make me laugh. Thats me and my kids – Im a big fan of the salad and meat plate where they can build their own. Something about stubborn personalities and taking ownership that gets them eating!

    Obviously I need this picnic set because my two rug rats have systematically lost every matching set of tupperware already in the house. In addition to the biros and socks on Douglas Adams’ planet of missing things, there must be many, many, many, many lids. Many lids, I tell you.

    This looks fantastic! We live near the river and are always picnicking, so this would be a most welcome and much used prize. We are also new to camping and this is exactly what we need to complete our ‘set up’ so to speak. I’ve never seen this chicken before either and it will also be fantastic for camping and of course picnics. The less prep = the better! There are so many things I love about this prize!     My little stinkers are old enough now to start taking them camping and that picnic table would be so handy. Playing some totem tennis will keep them out of my hair while I relax with some tunes (and a glass of white) and prep them some dinner with that chicken. I never knew it existed! Looks perfect for a picnic, just chuck it in the esky, too easy!

    I would love to win a picnic set because my family LOVES to go on picnics, but we just don’t have the great setup for carrying all our food, drinks, etc and always end up forgetting something. And who could say no to fun Tupperware picnic items???

    Gosh your kids are funny. I love that you leave in all the bits like when Kiki shoved half an avo in her mouth.
    I would like to win this because I need some little people friendly gear. I had nieces and nephews here this week who broke wine glasses, tried to abseil off dining chairs and generally caused all kinds of chaos in just 4 hours. I have so (SO) much admiration for parents.

    My kids favourite meal is wraps with chicken (i have a no mince eater).
    We’d love to win a picnic set , plastic so it floats haha when we pile the family into the canoe or new kayaks for a paddle on the river . What fun to stop for lunch on the water. It will be the best picnic day ever.

    I would LOVE this picnic set because with my husband and I studying money is short to spend on the little ones. Picnics are how we bridge that gap, we get a fantastic day out with the children and we can do it on the cheap and yet it feels like we spent the money of the world from the happiness it brings.
