By the time dinner time rolls around most of us have already used up our second wind and we are about to hit the wall. Whilst some days cooking can be a great way to unwind, other days it is nothing but a grinding chore.
Sometimes we all need a little helping hand at the end of the day, and although often this reference would be about Valium, today it is not.
Today it is about chicken and children.
The chicken is ready oven roasted chicken from the new Steggles Just Eat It range available from your supermarket, and the children are the little terrors that trash your house, pee on your lawn and eat like locusts.
If you combine these two elements, my friend, you could be kicking back and watching this easy meal for kids to make come together with a chilled glass of vino in your hand.

Here’s the low down on the recipe.
Yield : 6 tacos
What you will need :
- 2x 150g packets of Just Eat It Oven Roasted Chicken
- 3 limes
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 mango, diced
- 1 lebanese cucumber, diced
- 1 small spanish onion, diced
- 1 cup chopped coriander
- 2 cups shredded purple cabbage
- 1 avocado
- 6 multigrain tortillas, or tortillas of your choice
- chilli sauce to serve
What you will need to do :
Place your Just Eat It chicken into a bowl. In a small bowl combine juice of one lime and your spices and stir. Mix through your chicken and leave to sit while you put the rest together.
Into a large bowl place your cucumber, mango, onion and coriander and squeeze the two remaining limes over the top. Mix well to combine, and season to taste.
Pop your tortillas in the microwave for 30 or heat in the oven following the instructions on the packet.
Put a small amount of cabbage on the middle of your tortillas, top with salsa, add some chicken and sliced avocado. Slather your chilli now if you’re game and wrap the whole thing up. You may want to consider wrapping them in plastic wrap or baking paper to prevent salsa accidents with small children.
Repeat until you’ve made as many as you want, and enjoy with gusto.
NOTE : Even if your kids aren’t handy enough with a knife to do all of the chopping themselves, I often find allowing them to help in the creation process will entice them to eat what they’ve helped to make.
