When Lisa Simpson became a vegetarian her family made a conga line in their lounge singing –
“You don’t win friends with salad, you don’t win friends with salad.”
The great Simpsons oracle was rarely wrong in its 26 seasons, but I must beg to differ on this point.
A cracking salad goes a long way in my books and with a salad like this one you probably will win friends, hell, it may even be your lucky salad if you catch my drift.
You needn’t stick to ‘traditional’ salad vegetables, in fact, you’ll see many of my salads have shredded, wizzed and whacked vegetables that you may not think would work. I think the biggest key to a great salad is variety, texture, fresh herbs and a killer dressing.
Maybe what you really win friends with is dressing (or undressing, but that requires more research)?
Adding grains like quinoa, brown rice and pearl barley to salad gives you a great low GI energy boost that means you’ll stay fuller for longer. Throwing in some good low fat protein like the ready to eat Steggles Just Eat It range will ensure your family never does a singing conga line in your honour.
I made this salad with the kids ‘help’ in the kitchen…. what I really should have done is popped them with a tranquilliser gun before hand. If you ever wondered how I manage to do it, this episode is for you. Warts and all.
Barley, Pea and Fetta Salad with Rosemary and Lemon Chicken
Yield – serves 4 as a main
What you will need :
For the salad –
- 2 x 150g packets Steggles Just Eat It Rosemary and Lemon Chicken
- 1/2 cup barley, cooked (will make about 1 1/2 cups)
- 1/2 cup cooked peas, frozen are dandy
- 1 baby fennel, finely sliced
- 150g fetta
- 1/4 cup cranberries
- 2 tablespoons pepita seeds
- a handful each of fresh mint and parsley
For the dressing –
- 4 tablespoons good olive oil
- 2 tablespoons champagne or white wine vinegar
- 1 teaspoon seeded mustard
- 1 clove garlic, minced
- salt and pepper
Place your salad ingredients, except chicken, in a large bowl and then crumble your fetta over the top.
Place your dressing ingredients into a small jar and give a vigorous shake to blend together. Pour over salad.
Toss your salad well, and then carefully lay your chicken on top so it looks neat. Top with a few extra cranberries and pepitas for colour if you wish and serve to all of your friends.
So you may not actually win friends but you can win this…..
