HOLSBY TV – The secret to eternal youth, and Banh Mi with Pickled Carrot

I’ve been using new face products and having the odd facial lately as I feel like my skin is looking as tired as I feel.

Then I got to wondering if my internal health could possibly be impacting my external appearance?

Is there another way to preserve my appearance? How do mummies in Egypt get preserved, I wondered?

I’ve been doing extensive research into this area of eternal youth and I want to share it with you today……

If you have no interest in maintaining a youthful glow, then check this recipe out anyway. It’s an uptown sandwich that fulfils all the fancy sandwich criteria.

Bags of flavour? Check.

Fresh vegetables? Check

Herbs for zing? Check

Low fat except for delicious paté? Check

Steggles Just Eat It Oven Roasted Turkey? Check

Full permission to drink large amounts of wine? Check



Banh Mi with Quick Pickled Carrot

Yield : 6 rolls

What you will need :

For the Quick Pickled Carrot – 

  • 3 carrots, cut into match sticks
  • 1/4 cup white vinegar
  • 2 tablespoons caster sugar
  • 1 teaspoon sea salt

For the Banh Mi –

  • 6 fresh long bread rolls (traditionally crusty white a la Vietnamese bakery style)
  • 2 x 125g packets Steggles Just Eat It Oven Roasted Turkey
  • 1 packet of pate, unless you can be arsed to make it
  • 1 serve of pickled carrots
  • 1  lebanese cucumber sliced into ribbons
  • some sliced beetroot, optional
  • sliced iceberg lettuce
  • a bunch coriander, rinsed with roots removed but stems are fine
  • 5 spring onions, white part only, sliced into lengths
  • tamari or soy sauce, for serving
  • chilli sambal, for serving

What you will need to do :

Place your vinegar, sugar and salt into a bowl and stir until all dissolved. Add your carrot, stirring well and leave for half an hour. This will keep in the fridge for a few days easily (if you don’t eat them all).

Slice your roll and put a generous smear of pate on it.

Have a sip of wine.

Layer up your salad and your pickles, and add a generous amount of Steggles Just Eat It Oven Roasted Turkey.

Top with coriander, and spring onions and add a drizzle of tamari.

Add a whack of chilli and you’ve made your first one.

Nearly finished, celebrate with a glass of vino.

Continue the process until you’ve made all six rolls and find six of your closest friends to share your fancy pants exotic Vietnamese sambos with.steggles just eat it

    THAT is one bitchin’ recipe Girlfriend…….. and I am TOTALLY impressed with your petite wine glass!!! The only problem I had was trying to tear my eyes away from the GIANT bottle of red in your ‘picklin’ collection. Be damned if it doesn’t have my name on it (along with yours and a certain Jessie of course) shame we live in different states, geographically I mean. I think we probably live in similar states of mind, as mildly pickled. A bloody good thing too. Snogs and hugs. Holsby TV = Kinyum Kooking :O) hic…..

      How is that bottle? I’m scared to open it as it’s Greek and of dubious quality, but we all know quantity is the most important thing.

    Wow, love this site! you rock danielle and my kids love so many things from your cookbook too! so that is an extra bonus, fussy little brats lol.     Holsby TV just gets better and better with each episode! My favourite so far has to be the one where the kids are in the kitchen with, that happens here ALL OF THE TIME.
    I’d love to win this awesome picnic set for us as I’ve discovered if I take the boys down to the park to have their lunch all the running around and carrying on they do down there wears them out and they both come home and have a good sleep. Two sleeping toddlers = a quiet lunch/wine for me 🙂
